The Story of Ganie’s Lechon

Before the crackle of golden lechon skin became his signature, Isaganie Villano was just a young boy on his parents’ cattle farm in San Jose del Monte, Bulacan. His days began early—feeding cows, carrying pails of water, and helping prepare fresh meat for the market.

It wasn’t just farm work. It was a lesson in patience, quality, and pride in every cut of meat. Isaganie’s curiosity went beyond chores—he studied the perfect balance of fat and lean, observed how customers reacted to quality products, and learned the discipline it took to produce them consistently.

As he grew older, Isaganie carried these lessons into everything he did. One day, he decided to roast a lechon for a family gathering. The result was unforgettable—perfectly crispy skin, tender juicy meat, and flavors that had everyone talking.

Aired (December 23, 2019): Dinadagsa ng mga mamimili ang isang litsunan ng baka sa Bulacan. Dahil sa isyu ng ASF, umiiwas pa rin daw ang ilan sa karne ng baboy kaya ang espesyal na lechong baka muna ang kanilang ihahanda. Pero paano kaya ito inihahanda ng pamilyang tinaguring “Pamilya Lechonero”?

In the heart of Bulacan, a family’s fire never dies.
Every Christmas, New Year, and town fiesta, the aroma of slow-roasted beef draws crowds to their humble roadside pit — not for the usual lechon baboy, but for their now-famous lechon baka.

When African Swine Fever struck and pork sales plummeted, they refused to let the flames go out. Instead, they turned to beef — reinventing a feast tradition and earning the name “Pamilya Lechonero.”

From choosing the right cow — healthy, fresh, and with the perfect balance of fat and meat — to a 12-hour vigil by the fire, every roast is a test of skill, patience, and grit.
Old bamboo spits pierce through the marinated carcass, secret spices tucked inside, sewn tight, and slowly turned over glowing charcoal. The heat must be just right. One mistake, and hours of work are gone.

Around the pit, each family member moves with purpose: the father guarding the fire, the mother mixing sauces, the children packing orders.
For them, lechon baka is not just food. It’s a livelihood, a legacy, and a source of pride — every bite carrying the taste of discipline, dedication, and the Filipino spirit.

When pork was shunned, beef took center stage — and in this corner of Bulacan, the Lechonero Family made sure the feast never stopped.
